The pancreas can be affected by a great number of parasites and microbes, including yeast.
Clues are always a blessing. Usually there are not many, and they are so important.
While I have corresponded with many, never have I come across this situation.

If a hair analysis shows ~ in range minerals and metals, tongue pH is greater than 6, dysbiosis or low bile salt is not the issue. Extended periods of diarrhea can unbalance digestion, and strain digestive liver bile. I assume that food is being digested and not showing up in stool.

There are certain flukes, protozoans, that come up in a quick search.

I would seek out a doctor who specializes in endocrineolgy, and determine if a biopsy is warranted. Some pathologists are better than others. A teaching facility is often better at identifying small microbes and such.

Visceral or direct organ attack, or abscess, are not very common. Usually systemic infections are general, they move about and may over time affect veins, heart, lungs, brain, nerves, GI, teeth. These are common.

Hormone and other endocrine organs are more common. Many have hormone issues.

Pancreas is kind of special, in that it fits into none of these commonly affected parasite locations.

If a ultrasound is clear, and there are no blockages, I would think protozoan or amoeba. Other clues may help find a direction.
