re-sauerkraut I wrote "possible NOK" cause some guys having SIBO geta flare-up from sauerkraut cause it contains also some yeast, histamine and indeed lots of probiotics but it seems for some too much acidophilus is not ok.

nonetheless , experimenting is the only way to find your suitable solution - you could try and see...

i would also try to find out the root cause - usually is also in the gut. yeast/ parasites could create that acidic environment(not only candida spp)I would test more for the bugs inside.

i tried myself a plant based diet and for me it did not work. different people different issues. i believe meat and eggs have their role in our nutrition. experiment as you can and find your own diet. too low carbs for too long time is also not ok for good flora and also tyroid and immunity.
