T2,

I really appreciate the reply. I have 2 smoothies sitting out with 2 types of NON-culture (not marketed as such) probiotics added.

I also added cucumber and carrot which I heard will ferment on it's own ( I forgot to get cabbage, oh well, and there is also plenty of Sugar from other fruits)

24 hours is almost up.

How long do you think it will take at room temp? Are their easy ways to tell when it's done (ie maybe seeing fizz or bubbles at top?)

Is there a way to taste without stirring in any mold from the top (I still don't see any yet though).

Do I have to leave some room at the top?

DO I need to open the airtight jars every now and then to release gas to prevent explosion and for other reasons?

Thanks, I realize that is lots of questions but I will use this on myself and share what works!
