The theory relating diabetes and parasites is very possible and makes alot of sense, but I believe parasites would inhabit more organs than just targeting the pancreas. Diabetes may just be the one symptom that medical Science can document by test results, with many other symptoms being undetected or related to other issues.

I also know a couple of people who have cured diabetes by diet, weightloss, excercise and basic lifestyle changes.
