Hi. I have been using xylitol for about 3 years now. I don't eat it, though - I put it in my mouth after brushing (or when I'm out of the house, instead of brushing) and swish it around a little, then spit it out. I can feel how smooth and clean and fresh it makes my teeth/mouth, that's why I use it. However, I wouldn't be comfortable with consuming it, at least not regularly.
I don't eat that many sweet products that could be substituted. I will just eat things like sorghum molasses, frozen banana and coconut milk smoothies, 100% fruit preserves on ezekiel bread, medjool dates or 70% dark chocolate for my "sweets" and then eat regular
Sugar in something like cake and keep it occasional.
I personally don't want to make whole wheat and honey cakes, stuff like that... In my mind I would know I was "tricking" myself. If I really really want dessert, I will just eat regular dessert and enjoy it, and then not eat any more for a while.

Sugar substitutes, in general... most things you use
Sugar or their substitutes in are things we shouldn't be eating anyway. I see sugar substitutes as a crutch to enable diabetics and others to eat things that they shouldn't.
