Well, according to the yogurt test (link below), if it is accurate:
the enzymes I tried in milk that did not allow yogurt to form all had protease mixed in them.
But the other brand of enzymes I have that only has cellulase and amylase, with no protease, DID allow yogurt to form.
I think protease may kill the good bacteria, judging from this.
