recovering
Just finished my first batch of kvass. I'm curious about what it should taste like. Mine has almost no smell, but it smells like beets if you sniff it from really close. You can taste the beet flavor but it has much stronger sour and salt flavors. Is this close to what others here are making?
Also I tried to make a second batch. I used the same beets and some of the original kvass as innoculant. The second batch smelled the same as the first but had a very small amount of white foam (mold?) forming at the surface so I threw that batch out.
