Bitter Melon, Karela, Ampalaya, Kugua {Momordica charantia - Cucurbitaceae}
1> Slice it up.
2> Salt both sides of slices.
3> Let sit 15-20min.
4> Wipe salt off.
{although if you intend to stew it, you may not do this, but the flavour will be more pronounced}
Then use in recipes as you would say Squash, Parsnips, etc. Good in Stir Fry or in various Indian dishes.
Some varieties have more warts and ruffles than others - otherwise it is essentially a bitter Cucumber.
