mh, I make herbal vinegars with raw ACV all the time. (I also just finished making a goji vingar, and fruit vinegars : raspberry, strawberry...)
I haven't ever fortified them--don't like the idea of adding alcohol to them--How long do you think I can expect them to last (PS.we usually go through them in a few months, using them by the T. or more in water, or on vegetables.)
Would they last a year-- >>>say: nettle vinegar? which I've just realized is all-important

Simple Solution:
These are the places in your body besides the ovaries where estrogen is still produced in small amounts during and after the Change, and Nettles help keep you in balance during this time.
Nettle is also the herb with the highest chlorophyll content of any land plant.
Nettle means "needle," and tiny hairs on the stem and leaves contain an acid that can cause a stinging rash. Dried or cooked, this weed loses its sting but not its gifts of vitamins, proteins, calcium, and iron.

-Nourishes and revitalizes nails, hair, and bones
MINERAL-RICH VINEGAR INFUSION
Fill a quart jar loosely with baby Nettle tops, leaving an inch of headroom in the jar. (You can also add leaves and flowers of Dandelion and Red Clover.) Pour in organic cider vinegar to the top. Cover, label, and date. Store at room temperature for six weeks. Strain through cheesecloth or a sieve into a salad cruet or other storage bottle. Use freely in salad dressings and marinates. For a nutritious drink add a teaspoonful to a glass of apple cider or plan water, and honey to taste if you wish.
