There are possibly many reasons for your bloating, all sourcing to slow digestion. This is one big topic to rebalance, as you may or may not know. If you didn't, Curezone is a great resource to begin learning.
The first thing I notice is these veggies are all 'dry' foods. According to Ayurveda, and some others like traditional chinese medicine (don't know a lot about that one), these food are 'dry' in constitution. Constipation is a 'dry' condition, so these type foods compound the dehydration.
Also, are you having any good fats with veggie/grain meals? Such as ghee, butter or sesame, coconut or olive oil? They are needed for digestion.
According to the ayurveda system, it also depends what body/personality constitution you are. If you are vata (dry,wind,cold) dominant and are eating a lot of vata foods (dry foods like mushrooms and all cruciferous veggies, which broccoli collards and cabbage are) this is increasing your imbalance.
Assuming that this condition is not a new one, it will really take time to rebalance itself; however, there are many building blocks back to balanced health. Personally, I've just started looking into again, ph balance while working my way up to flushing.
Also what happens if we've been eating a lot of processed foods and unhealthy foods most of our life...assuming you have eaten western diet alot...our digestion gets impaired over time and actually cannot process 'healthy' foods again immediately...we have to rebuild digestion. (I've experienced this myself.)
