Hey dewyeyes,
Welcome to the world of vegetarianism, where variety is the spice of life. I converted to vegetarianism at the age of 18, over 35 years ago. Here are a few vege cookbooks that have kept me going. The books which feature more traditionally American type foods are listed first:
1. American Wholefoods Cusine
Nikki & David Goldbeck's
2. Ten Talents
?? Hurd
3. Laurel's Kitchen
Laurel Robertson, Carol Flinders, Bronwen Godfrey
4. Tofu Cookery (Warning: Some of the receipts are very
rich and may not be good for your
health)
Louise Haglery
5. Kathy's Kitchen & The Art of Dieting Without Dieting
Kathy Hoshijo
If you want to try something much more challanging, and which requires a great deal of culinary skill, plus knowledge on where to get all the ingrediants, then quite possibly the best cookbook ever made is "The Art of Indian Vegetarian Cooking" by Yamuna devi.
Most of the books listed above are fairly old, but classic and should be available at health food stores or bookstores. Hope that will help you get started.
