Thanks for the reply. Yeah, mold forms and the stuff smells awfully rotten. Not like sauerkraut at all. I am going to try create a temperature-controlled environment. I would prefer though, to prevent mold from forming on the surface even though it is normal. I think I can accomplish this in one of three ways:
1) keep the container in an airtight environment into which I blow low concentration ozone. That should kill anything on the surface but not sink into the water and disturb the sauerkraut
2) fill the environment with nitrogen
3) use an airlock with very little airgap
I'm not sure which is the best way to go. I have an ozone generator and I can get nitrogen pretty easily. The airlock is a bit harder to get a hold of, but I know a glass-blower...
Hmmm. Any ideas? My plan is to build an awesome sauerkraut "incubator" where I can make barrles of the stuff really low-maintenance. I love it! And I need it...
