I'm also interested in fermented meats. The only real recipe I saw for that was pickled fish. Can the same be done for meat? I was thinking about doing a dry age thing in the refridgerator. Could you pickle something like tongue or liver in a jar with whey and break the meat down?- Re: Ferment meat? schlüggell

This is a reply to # 660,986There is another book that has some information on fermenting meat and fish: "The Indigenous Fermented Foods of the Sudan : A Study in African Food and Nutrition", ISBN: 085198858X.
You may have to look around for a while to find it at a decent price and it is not really a cook book with recipes. However it contains more information on the subject than I have seen elsewhere. Haven't tried any fermented meat myself though.
