There is another book that has some information on fermenting meat and fish: "The Indigenous Fermented Foods of the Sudan : A Study in African Food and Nutrition", ISBN: 085198858X.
You may have to look around for a while to find it at a decent price and it is not really a cook book with recipes. However it contains more information on the subject than I have seen elsewhere. Haven't tried any fermented meat myself though.
