I don't have a scientific answer - I can just tell you what I am doing.
I, too, am weeding out all aluminum and plastic kitchen/cookware. My approach is to use glass bowls, Pyrex cookware, and only use metal pans if they are labelled stainless steel. If there is no label, out it goes. I also got rid of all my flatware and am slowly replacing it with silver and wood. It is harder to find wood flatware that is reasonably priced, however.
I have gotten lots of the glass cooking pots at yard sales and thrift stores. Saves me lots of money.
Since I am doing this bit-by-bit, not throwing everything out at one time, I kind of just target what I am looking for (eg. a glass lasagna pan, a large stock pot) and buy one when I find them at good prices.
