I am new at this.
I can get dried cayenne pepper, but I don't think I can get fresh cayenne pepper which is a part of Dr. Schulze 's recipes I have seen. What do I do?

This is a reply to # 545,145I think your window of opportunity for getting fresh peppers is about over for this year. Sometimes you can get Mexican peppers but be sure they are organic. You can get 150,000 hu cayenne powder from Pacific Botanicals. This makes a pretty good tincture. Sometimes Blessed herbs has 200,000 hu cayenne so try one of these and tincture it.

I perfer fresh tinctures but if you are not an herbal manufacturer :) you usually wind up using dry. I have not found much difference at all in the tinctures to be honest.
You might be able to find some peppers at your local Whole Foods, etc. I have seen habaneros at my local grocery in the past few weeks... - Re: question on how to make cayenne ... Tyler

This is a reply to # 545,149Even just using dried, you can make a mighty powerful cayenne tincture. I've done both and haven't really noticed a difference. Use dry if that is what you can get. If you can get fresh, then by all means do that.

This is a reply to # 545,154Wow. Thanks everyone! I will check out Whole Foods and see if I can find some hot peppers. Otherwise, I will just make it with dried cayenne peppers, since it sounds like making tinctures with just dried peppers turn out well.
Also is it hard to find 100 proof vodka? (I am not a drinker and I don't know if 100 proof is hard to find).

This is a reply to # 545,156It depends on which state you are in. It is easier to find 80 proof vodka in general. Just ask at the liquor store.
Probably the most important thing to do when using dried cayenne is make sure the heat units are high. Pacific Botanicals 150,000+ HU habernero peppers are very hot. I suspect they use 150,000+ to designate the low end of the range. Don't use 40,000 HU stuff that is more commonly available. Go to Pacific Botanicals, Blessed Herbs, Botanicals, or Mountain Rose Herbs. They all have good stuff. I'm sure there are other good suppliers, those are just the ones of which I am aware that have primo stuff.Advertisement

This is a reply to # 545,157Most states also sell Everclear and that is 190 proof or 95% alcohol. You can add Everclear to the 80 proof if you feel it necessary to get it up to 50%. I have added Everclear to certain tinctures and I have made a lot of others with just the 80 proof and they have turned out great. The highest Vodka I cac buy is 80 proof. For most things that works great. Good luck.

This is a reply to # 545,160Thank you very much Tyler and herbman. I am planning to get dried cayenne from Pacific Botanicals. I will try Beverage & More and see if they have 100 proof vodka. If they don't have it, I think I will just try the 80 proof and see how it turns out.

This is a reply to # 545,164If you would feel better using 100 proof alcohol just add two 200 ml bottles of Everclear to the 1.75 liter bottle of 80 proof Vodka and you're there. That's the small glass bottles that are available most places. That may not be exact but without weighing it down to the gram or smaller it is definitely close enough. It takes about 25% alcohol to preserve the tincture and unless you are using fresh herbs that will be enough. The 40--60 mixture of alcohol and distilled water in the 80 proof is sufficient to extract the properties of most herbs except things like Chaparral, Lobelia and a few others.Advertisement
