Shannon,
In the spirit of your question the answer would most likely be fruits and vegetibles. Apples, oranges, grapefruits, carrots, broccoli,
Celery etc all keep fairly well in temperatures that humans can tolerate, and are all quite healthy. You do not need to be concerned about beginning your road trip with everything you plan to eat the entire time. I have been to Texas on occasions, and despite popular misconceptions, they do have all of the amenities of most other states, including grocery stores and health food stores ;-0 I would guess that your anxiety is probably stemming more from the notion of being in such close quarters with friends who will be aggressively eating things that you want to keep permanently from your diet, and this is a legitamate concern. I might suggest that you test those waters before you embark. Go to "lunch" with your friends and take a large lemonade. Help a friend fix a meal. If you cannot take the pressure in a familiar situation that you can walk away from then you will most likely have a great deal of difficulty on an extended trip where you are essentially "trapped". Remember that you took the path that you are now on and where it leads you is entirely up to you; there is no failure, no yardstick that you have to measure up to, unless you, in your own desires, create one. So, what ever you decide to do, do it with integrity to yourself and be comforted not by what others think, say or do, but by what you know is true.
With Warm Regards,
