I ordered a raw ghee from Wilderness Family Naturals. It was held up for over a week in transit due to weather and probably sat in South Florida (over 90 degrees)without refrigeration the whole time. It tastes kind of "plasticky" and not sweet or creamy or buttery. Do you suppose it's gone rancid? How can you tell if ghee is spoiled or rancid?

It says to be stored at room temperature but I've learned that our room temps down here are not normal. I usually keep my air conditioner set at 80 degrees. (Well, except for the month of Winter when I turn the heat up to 70 and wear lots of sweaters and shiver like a skinny chihuahua!) Storing food is tough, you have a choice of 80 degrees or 35 degrees. Forget "store in a cool dry place."

The difference isn't so marked that it's totally better for all people. Some people do better with butter than Ghee. It depends on the person. The main difference is that Ghee has all the dairy sugars removed.
