I prefer to eat the sprouts, they dont give much juice really (as mentioned). They are easy to digest if properly chewed, but beware, I used to see whole alfalfa after doing a
colonic sometimes! They are so small and as you say 'weedy', that they can easily slip down in tact.
I found that to get the best, strongest sprouts I just needed to mimick the real sprouts life. By this I mean I started them off in a cupboard (dark as they would be in the soil), then when they just open their tips I put them in the light. This way I had a firm shoot and a tasty green tip/leaf.
I mainly sprout alfalfa, broccoli and mung (the easiest, grows into a bloomin triffid if left for a few too many days!). I have just started enjoying sunflower, aduki and chickpeas too. Very 'king of the sprouts'. I have a 3 tier, usually 2x alfalfa maybe mixed with broccoli), then one of either mung or the aforementioned big boy mix.
Early on I had problems with mold, but this was due to sprouts either a. Being too warm and water therefore going murky, or b. overwatering. Sometimes c. leaving them in too long (transferring to fridge is a good idea, but I fopund they only really last 2 - 3 days).
