Turkish Green Beans
1/2 lb green beans, trimmed
1/2 cup walnuts
3/4 cup bread crumbs
1 clove garlic
juice of 1/2 lemon
handful of parsley
1/4 tsp salt
pinch of pepper
Put a pot of water on to boil. Place the walnuts, bread crumbs, garlic, lemon juice, parsley, salt and pepper in a food processor and blend until it becomes a paste. Add the olive oil while the machine is still running, and whiz until everything is smooth. Cook the green beans in the boiling water until tender, but still bright green in colour, about 4 minutes. Drain the beans, spoon the sauce over top and serve.
