I'm wanting to experiment (on/with myself/my responsibility) with ACV with greater acidity than the typical 5%. If I 'evaporate' some ACV, resulting in a smaller quantity of liquid, will the remaining liquid be of higher acidity than the original portion. OR, will the acid portion of the liquid also evaporate ... meaning the remaining smaller portion of liquid will still be 5% acidity. What's your opinion ???
