I'm supposed to be on a ketogenic diet and I know that coconut is one of the main foods while on that diet. My question is whether that's just coconut oil or whole coconut such as desiccated or coconut butter? I know coconut contains a Sugar inulin, is that OK to have on a keto diet or should it be restricted? Does inulin feed pathogens?
Inulin is indigestible by the human enzymes ptyalin and amylase, which are adapted to digest starch. As a result, inulin passes through much of the digestive system intact.
