Here is the coconut yogurt recipe:
Get your fresh young coconuts and drain out the water. Then scoop out all the meat into a blender or food processor and puree it. I started off with kefir starter packets, but once you make the first batch you can save a spoonful of it to culture your second batch.
I make 6 cups of coconut meat this is about 6 young green coconuts but the size does vary- you'll get more meat out of some, less out of others. 1/2 c of lemon juice, 1 tbsp of coconut oil (optional, I do this for the extra fat). 1 tbsp of toasted coconut butter (also optional but I like the flavor), 1 tbsp vanilla extract (also optional but good flavor), and your kefir starter (I use body ecology brand). Blend it until creamy. Then transfer it into a bowl and stick it in a dark cupboard (room temp) over night. next day stick it in the fridge.
Its easy after the first batch because all you need is a spoonful of it to culture your next batch
