Before addressing the fat and weight issues, i have a feeling that you have a far more important question which remains unasked which is: "Is it safe for you to do a 7 day dry fast?"
Have you had the experiences leading to this which make it so? I have seen dry fasting experts recommend a lot of water-only fasting to more safely pre-cleanse the body in such a way that such a substantial dry fast would be safe.
Fat loss is tricky and there are different theories on this where dry fasting is concerned. I would estimate that you would burn somewhere between 3 and 7 pounds of fat in a 7 day dry fast depending on whether we believe that the body will burn more fat in a dry fast due to the need to procure more water for the body (from the fat) in spite of a set caloric demand from within.
You might also be able to lose some excess water weight and keep it off, particularly if you have been eating high sodium or high sugar and intend to change this... and you might be able to lose some other weight permanently, as one possibility some impacted fecal matter in the colon.
Aside from this, much of what you would lose would be temporary and expected to return within a couple of weeks including intestinal content displacement and normal water levels.
