Weird recipe of the day:
Dried zucchini. Cut zucchini lengthwise into about 8 narrow strips (roughly, each strip about 1/4
inch thick or so). Lay them onto a baking sheet and bake in a 200 degree oven until fairly crispy, but before they turn overly dark.
They turned out just a little bendable, so they weren't really like "chips", but I noticed even so that having them on hand to nibble on this week was really useful: they are a neat little snack.
The 200 degree setting on most ovens is usually the lowest one. I don't use a hotter setting because they become too hard to monitor without sitting right there watching them like a hawk, to prevent burning. I find it easier to use a lower 200 degree setting and forget about them for quite awhile, checking them every 15 or 20 minutes is fine at that heat level.
Since they do end up with still a slight amount of bendability, thus still a little moisture in them, I refrigerate them when done to prevent any mold issues.
Don't knock them till you try them! :-)
