Sometimes it takes time to transition a stubborn animal over to raw. My cat, Max, went on a hunger strike when I tried to convert my cats over to raw and lost so much weight so quickly that he went into hepatic lipidosis. I didn't have a scale to monitor his weight and since he's a big boned guy, I simply didn't notice the weight loss until it was almost too late. He's fine now, btw, but it took several years trying on and off to convince my cats that raw tasted a lot better than kibble.
Have you tried to lightly cook the meat and offer it as a treat or in addition to a little bit less kibble or canned? Have you offered him a raw soup bone as a treat? Dogs and cats love lightly cooked chicken livers. After you get him on lightly cooked food, mix some raw in with it. If you can't get him on all raw, lightly cooked homemade is good too.
You should be giving your guy cod liver oil to get some vitamin d in him. It will do wonders for his
Arthritis and the vitamin A will be good for his eyes. I'd dose him a good tablespoon or two every time you feed him. Watch his stools to make sure he's not getting too much oil.
