Hello,
My name is Amie and I have a 5 year old son, Aidan, who has Autism. Aidan has been GFCF for a couple of years now. While his symptoms have not improved being on it, he has massive fits and behavioral problems when he does have gluten or casien.
I am eager to try the SCD, however I have a question. The diet allows cheese, butter, and homemade yogurt, all of which contain casein. Even though the cooking process of yogurt eliminates lactose, the casein is still present. Since we know that Aidan has adverse reactions to casein, should we allow it anyway since the diet does? Or should we continue using substitutes? Most of the substitutes are soy based, almond based substitutes are difficult to come by. What would be an acceptable sub for these items?
Thank you for any insight you can give. I look forward to chatting with you all.
