This is a reply to # 1,642,194I like your avatar. My dog just let out a real stinker.
I would think the best milk kefir would be when you see clear water patches on top and bottom, it's thick and it tastes like yogurt. If it goes longer it probably has more acid, but not much more probiotics.

This is a reply to # 1,642,194It becomes more acidic the longer you let it sit. Candida doesn't like Acid, so let it sit more than one day IMO. I let mine sit for 2 days before I start a new batch. I then place the milk in the fridge and let it sit another day.
Does anyone know how many days it takes for the Sugar in the milk to be consumed?
