What's for dinner?
Well, tonight it is a chicken, veggies pasta dish. Call it "Chicken a la Tony".
What I did was get together:
First step is to heat the oven to 350-400 degrees and get a pot of boiling water going. Add sea salt for taste and a tablespoon of virgin olive oil to help prevent sticking (though you still will need to stir from time to time).
While the oven is heating up boil the rice and pasta until it begins to get soft, then drain in a collander.
Mix all of the ingredients except the cheeses in a large mixing bowl and then transfer to a large bakeware pan (I use a large Corningware glass pan).
Spread the cheddar cheese over the top and then finish off by sprinkling with the Parmesan.
Cover the pan and place in the oven for 45 minutes and Viola! You can also make a less juicy version by adding more chicken broth and letting the rice and pasta cook and swell as the dish bakes, and you can play around with other vegetables and perhaps adjust the amounts of chicken broth upward and Italian dressing downward - but I promise you it is gonna be . . .
Yumm!
Did I mention I am an awesome cook? Wait until I tell you about my baked salmon with peanut and cherry glaze, steamed asparagus with lemon juice and butter and long grain & wild rice dinner or my melt in your mouth pot roast or my veggie and egg breakfasts or . . .

Yeah, you did have not only two helpings, but two huge bowls full. For a gal that could turn sideways and stick her tongue out and look like a zipper not long ago, you are doing quite the job of socking away the food.
An RRR rating? Aw shucks now. Sheesh, I better not post the baked cherry and peanut glazed salmon meal or the pot roast recipe. I would post my truly decadent breakfast, but it is so decadent and not exactly super healthy that there is no way I would post that it is made up of scrambled eggs with cheese, bacon, sausage links, biscuits and gravy, pancakes and maple syrple, hash browns, sliced tomatoes with sea salt (see it is healthy after all - lol) and cantaloupe slices.
Just no way . . . besides, get served a breakfast like that in bed and you won't be getting out of bed for hours. Hmmmm . . . . .
