Hi, I was just reading about Chia Seed Pudding and was curious if anyone knows if chia seeds are legal on the Specific Carbohydrate Diet.
I know seeds in general are legal after 3 months. I'm an experienced SCD'er of five years. My question concerns Chia Seeds in particular. They seem to have some odd characteristics. To make pudding they can be soaked in nut milk overnight and absorb 10 times their weight in liquid, creating a sort of gelatinous pudding... reminiscent of tapioca. I've never seen any food on SCD that behaved that way. I'd like to try the pudding but I'm questioning the chia seed's legality...
Anyone have any info?
