1 cup of fava beans
1/2 cup chickpeas
1/2 cup cracked wheat (burghul)
3 whole garlic bulbs
5 onions
1/2 cup finely chopped coriander
1/2 cup finely chopped parsley
2 T. salt
2 T. flour
1 t. pepper
1 t. dried coriander
1/2 t. hot chili powder
1/2 t. black pepper
1/2 t. powdered cumin
1/2 t. cinnamon
1/2 t. baking soda
1 t. baking powder
5 cups of oil for frying (yuk)
1. Soak both the fava beans and the chickpeas in water. Leave overnight.
2. Remove any stones that you might find in the cracked wheat then soak in water for one hour.
3. Drain the fava beans, chickpeas and burghul well.
4. Peel the onions and garlic and chop them very finely.
5. Mix all the ingredients very well, then put through the meat mincer twice.
6. Add the seasoning, baking soda and baking powder to the above mixture and knead well with the hands.
7. Leave the dough aside for one hour and a half, then knead again.
8. Wet the hands a little and take a T sized piece of dough or paste and shape each into small round patties (3-4 cms in diameter)
9. Deep fry in hot oil until golden brown.
10. Serve hot with cucumber salad and tahinah sauce.
