The too thin author list the raw potato high on the list of alkalizing foods. I have read of cancer cures and pain cures using RAW POTATO and then you read all sorts of problems when we cook good foods:

Potatoes are more delicious when baked, but they lose some of their most valuable protein in baking, for the protein lies next to the skin, and often this is really carbonized in baking, which destroys it.
