Lisa, you mentioned having a hard time giving up coffee. I read somewhere on this site that ginseng is a good subsitute.
We drink dandelion coffee. We get the dried dandelion root (I think it's had chicory added to it or something). Boil it and add milk or soy milk. Tastes great! Even coffee addict hubby likes it. He still has his one or two cups of coffee a day though but I'm taking him off them for a few weeks of cleansing soon! (getting sick of him slothing round the house with no energy!)
