Hi. Your diet it looks very good and well balanced and spaced out for proper digestion. My father had thyroid cancer so look to brain fog as possibe hypothyroid. I was directed to the Budwig diet and then lead to fermented foods. It was at this point I found Dr. Paul Yanick and his research into commensals and bile production.

The main problem it seems is the inflamation of the vega nerve which controls a lot of the internal organs of the body so by focussing on this with theproper nutrietns you can fix the rest of the body.
