It sounds to me like you are going at a good, slow rate. How your morning intake effects your sleep, I'm not familiar with that. I do know that if I drink mine beyond 5 PM I can't sleep - and that's a common problem with evening drinkers. I got up to a cup and a half in about 10 days primarily in the morning after starting with no adverse side effects.
Martha Christy's protocol (Your Own Perfect Medicine) is two or three tablespoons a day, if I remember right.
If insomnia is your only side effect, you might try going without for a day or two to see if it's really the UT.
