I have been reading up on Cacao and I am finding it difficult to find the truth. I want to purchase some cacao nibs to supplement my diet. There is another article on here that states that true raw cacao should be white and that if it is dark brown then it must be roasted like that from Nature's First Law. Here is the link:

Questions:
1) Are the cacao beans an therefore nibs(peeled) white sometimes or at least light-colored? All I can find is brown colored ones.
2) What is the white part? This is what is marketed as cacao butter. Is the white part inside the cacao nib and just pressed out?
3) What is a good place to buy some cacao that is still "raw"?
