Buckwheat cereal
1/2 cup buckwheat
1 cup water
1/2 cup almond milk (or soy milk or rice milk)
2 tablespoons honey
1/2 teaspoon cinnamon
Directions
Combine water and buckwheat. Bring to a boil then turn heat down and let simmer 15 minutes until the water is absorbed. Be watchful at the end of cooking to not burn the buckwheat.
Combine cooked buckwheat, almond milk, honey, and cinnamon.
If you soak the buckwheat in hot water for the night ( covere it !) it is ready to eat in the morning without cooking !
Cooked amaranth cereal
It’s got a nutty flavor, has a sort of creamy-yet-crunchy texture, and is quite satisfying. It takes about 20 minutes to prepare, but if you’re in a hurry just bring it to a boil and turn down the heat, then go take a shower while it’s cooking.
Per serving:
1/4 cup amaranth
1 cup filtered water
fresh or frozen blueberries (or other fruits and nuts )
honey ( or blackstrap molasses , peanut butter , ahorn syrop )
dash cinnamon
Bring the amaranth, salt, and water to a boil. Reduce heat and simmer for 20 minutes. Top with fresh or frozen blueberries (or any kind of berries or dates), drizzle with agave nectar, and sprinkle with cinnamon. Enjoy it with a piece of fresh fruit, a cup of tea, and the morning paper, and you’ve got yourself a complete breakfast.
