Upon breaking an extended water fast, is it wise to consume high carbohydrate food sources or a protein or fat food source?

Breaking a fast is a gradual and very slow process and you can't consume anything else but raw foods for up to 10 days of breaking the fast. Do not consume meat at any cost and do not consume fatty foods. Breaking the fast is more important than the fast itself!
