I stumbled across this. It seems to be an online book that provides quite a bit of information on fermentation - different types of fermentation, why it is beneficial, how it is done, etc. Useful whether you are new to fermentation or are an old pro.

It includes telling of many different vegetables and fruits and how they are fermented around the world, and telling us how to do it - recipes!
