January 14, brought some foods from J.R. Organics to the student Lounge. Will do the same today, January 20,
Flowers from J.R. Organics enliven the Pacific College of Oriental Medicine Clinic Lobby each week. A J.R. Organics CSA drop off is located here for students, staff, and faculty on Thursdays--beginning once again soon. I am plant that dream for 2014.

IMPROVING NUTRITION AT PACIFIC COLLEGE OF ORIENTAL MEDICINE SAN DIEGO CAMPUS
improving nutritional awareness at Pacific College of Oriental Medicine San Diego Campus is on my Radar for 2014. Toward the end of last Trimester, I began bringing some of the foods from J.R. Organic's CSA to the kitchen area where Chantéa Watson, a student, set a tone for preparing some of these foods.
EDEN FOOD SNACK IMPROVEMENTS AS ALTERNATIVES TO THE SNACKS IN THE VENDING MACHINES
I also brought some samples of Eden Foods snacks to the Student Council meeting. Emily followed up through expressing interest to order some of these products from Eden Foods.

Warren Shier co-author of Ancient Wisdom, Modern Kitchen, and my long time supervisor and friend on the faculty is one of the first to express interest in joining the J.R. Organic CSA.

GRINDING KAMUT TO MAKE FRESH FLOUR
Grinding Kamut® ancient wheat into flour is an activity that inspires youth and adults alike. Many people have never experienced fresh wheat being grown or harvested, as well as seeds of wheat turned into flour.
I look forward to experiencing this as we make fresh flour that can be turned into Healthier Pizza Crust, low in sugar pie crust, and breads.

Long range, I would like to see kitchen improvements that include a real oven on campus.

What were you doing the last hours of 2013 and first hour of 2014? I was grinding fresh Kamut® brand ancient Khorasan wheat into flour. I have a hand grinder for this purpose.
