Harvest over this past weekend was 5.8 million pounds, up slightly from the week prior. Although demand is strong, shipments were off slightly from the week prior and will need to be monitored closely. As an industry, we need to be cautious not to over harvest if inventories start to rise. Prices on 40s and larger continue to be stable, however on 48s the market this week feels like it could be softer. The market on 60s and smaller continues to be weak. Make your own apple cider vinegar
Step 1--Making Cider
Cider is made from the winter and fall varieties of apples (summer and green apples do not contain enough sugar). Fruit should be gathered, then washed well to remove debris. Crush the fruit to produce apple pulp and strain off the juice. Use a press or cheesecloth for straining.
Adding yeast to activate fermentation is not essential, but will speed up the process. Special cultivated yeasts are available for this purpose at wine-making shops and biological labs--bread yeasts are not recommended. Avocado Pita Pizza
Ingredients (use vegan versions):
pita pockets
2 large avocados
1 tablespoon lemon juice
1 tablespoon fresh dill (dried is OK)
Celtic sea salt to taste
fresh ground pepper
spinach
tomato
Braggs Liquid Aminos soy sauce
Directions:
Preheat oven (I use toaster oven) to 350. Mash avocado with lemon juice, dill, salt and pepper. Spread about two generous tablespoons of the mix onto a pita. Sprinkle Braggs onto the spinach. Put a layer of the spinach on top of the avocado, top with diced tomatoes. Put in oven for 10-15 minutes.
