I don't think I've ever liked almonds, roasted or otherwise, until I started eating raw. Raw almonds are kind of soft and have a slight sweetness to them, reminiscent of cashews. You don't have to soak them before eating them, but if you want to make a raw recipe using blended almonds, it is recommended that you soak them for creamier results.
