I stumbled across this. It seems to be an online book that provides quite a bit of information on fermentation - different types of fermentation, why it is beneficial, how it is done, etc. Useful whether you are new to fermentation or are an old pro.
But really liked the sound of one of the spicy fermented recipes but some of the ingedients - I guess some homework is in order- that's the great thing about CZ one person does their homework and someone trys it and adds to it
