How do you harvest a banana stalk?

So how do you harvest a stock of bananas?
I was thinking of calling for an Enchanted Garden
Party for sometime this January, to harvest ours.
We had such a great community gathering
the other night that I thought to get back on track
with simple themed garden parties once a month.
I know I deeply need to get back in the earth,
and it is fun to have a local tribe of gardeners helping out.
The theme could be this quote from Mae West:
"Is that a banana in your pocket or our you just
glad to see me?"

I did not know when to harvest the bananas.
Do you leave them on the tree until they turn yellow?
"Bananas are ready for harvesting when the fingers are plump, green and almost ready to turn yellow. Lou Arbolida, aka "Nanaman", who is the president of the Tropical Fruit Club of Central Florida says a good rule of measurement is to notice when the first petal opens, mark the date on the fruit with a pencil. From that date to twelve weeks later, the fruit should be ready to be cut down. They ripen best at 60 degrees in a dark, cool location. "
