April 9, 2024 - Got Ghee? - A Very "Healthy fat"! -
"Healthy fats and exclusion-zone size
Abha Sharma, Gerald H Pollack
Abstract
"A fourth phase of water, labeled exclusion-zone or "EZ," extends from hydrophilic surfaces. ... In cell systems, EZ water interfaces with membranes, macromolecules, and organelles, and its buildup appears to be vital for function. For years thought to build health, fats have gained a negative reputation over the last few decades.... now they have become more accepted.
We tested several fats for their capacity to generate EZ water. Large EZs formed next to ghee, coconut oil, lard, organic clarified butter, and 'Brain Octane®' oil.
Cold ghee surfaces produced especially large EZs and exclusion-zone size ..."[21]*
Thanks to Gina - the "Hydration Foundation" for presenting this reference!

"The third hydration trick next is one that may sound crazy, but eat more fat.
Yes, butter, (just not on bread….sorry). Fat from butter ushers out waste accumulated
from the sloggy, lay-about winter because many of the most stubborn unwanted materials
are ONLY fat soluble.
Fat is an essential part of your body’s miraculous, intelligent, complex sophisticated
hydration and flow process. Skip fat to your cleansing detriment.
Fats not only escort out crap, fats make the gates to let water in and out of your cells.
On top of that great service, Fats coat all your electrical wiring.
We are deeply under-nourishing ourselves if we skip fat to get skinny and your smart body
will say no to letting go of fat every time.
Google for yourself how much weight gets lost on a high fat diet (again, just don’t combine
it with bread, pasta and pastries, you get the opposite effect).
I put extra butter on my high protein meals like eggs. You can use ghee to cook if you haven’t
tried it. Ghee is a super hydrate, tested in the Pollack Lab at the University of Washington by
Dr. Abha Sharma ... It turns out that ghee activates a large charge zone in water molecules.
Sharma admits it’s one of her favorite pieces of research!"

March 1, 2022 - The Real Thing!
"...real butter was nearly impossible to get during the 'war' but if you were lucky you lived in the country near a dairy and was one of the farmer's friends. Grandma churned cream and made our butter. Oh, was that ever good! That stuff we get now is nothing like the REAL THING." [20]

Did you know that butter is a first class health food?
Here's Butter's Profile of Just the Fatty Acids:
"Butter provides appreciable amounts of short- and medium-chain fatty acids, which support immune function, boost metabolism and have anti-microbial properties; that is, they fight against pathogenic microorganisms in the intestinal tract.
Butter also provides the perfect balance of omega-3 and omega-6 fats. Arachidonic acid in butter is important for brain function, skin health and prostaglandin balance.
Conjugated Linoleic Acid (CLA) - "a polyunsaturated omega-3 fatty acid. CLA raises your metabolic rate, boosts muscle growth, reduces resistance to insulin, and strengthens your immune system."[12]
When butter comes from cows eating green grass, it contains high levels of conjugated linoleic acid (CLA), a compound that gives excellent protection against cancer and also helps your body build muscle rather than store fat.
Glycospingolipids ...
These are a special category of fatty acids that protect against gastrointestinal infections, especially in the very young and the elderly. Children given reduced-fat milks have higher rates of diarrhea than those who drink whole milk.
Cholesterol ...
Despite all of the misinformation you may have heard, cholesterol is needed to maintain intestinal health and for brain and nervous system development in the young.
Wulzen Factor ...
A hormone-like substance that prevents arthritis and joint stiffness, ensuring that calcium in your body is put into your bones rather than your joints and other tissues. The Wulzen factor is present only in raw butter and cream; it is destroyed by pasteurization."[1]
How to Purchase Butter
The BEST butter is raw butter from grass-fed cows, preferably organic. Next is pasteurized butter from grass-fed cows, followed by regular pasteurized butter from supermarkets. Even the latter two are still a much healthier choice than margarine or spreads.

"The butter is big. Some folks are so madly in need of quality animal fats that they simply can’t get enough butter. Moms find kids reaching for the butter or already sitting there eating a paw full of butter, eating happily. The nutritional profile of butter is rich. Dr. Natasha says, 'Butter and ghee provide various fatty acids with important health giving benefits, vitamins A, D, E, K2, beta-carotene and other nutritious substances in an easy-to-digest form.' (p 122).
Sourcing the best butter possible is important. 'Everyone has to do their best in their circumstances,' Dr. Natasha says.(i)
Dr. Natasha says the best butter is bought from a farm who makes the butter from cultured organic cream.(ii)
She says the second best butter is made from raw organic cream, made into butter.(iii)
She says the next best is, 'Organic grass fed from shops, which is made from pasteurized cream. Then the rest, including Kerrygold.'(iv)
Kerrygold butter is available to most, if not all, of clients worldwide. Dr. Natasha says, “It is OK if there is nothing better.”(v)
To itemize, according to the bet sourcing available to you, listing butter from the best options, down, purchased from:

April 5, 2018 - Raw Butter - A Nutrient-Dense Food - Does Not Need To Be Banned By Government!
The Farm-to-Consumer Legal Defense Fund believes consumers have the right to buy products directly from farmers, but the government disagrees. The government has instead chosen to build a veritable wall of laws. These laws prohibit the sale of nutrient-dense foods, torment farmers with unannounced inspections and piles of paperwork, and make it harder for farmers to do what they do best: farm. Your support helps FTCLDF attorneys fight to tear down these walls, brick by brick.
For our 2018 campaign, we have set our sights on raw butter and increasing its accessibility to YOU! Raw butter is an incredible source of vitamins, fats, and proteins and, most likely, you are legally unable to buy it. That is why FTCLDF has begun a fight to change this, and we need your help. Your gift will help us fight this fight and many more.
The U.S. Food and Drug Administration (FDA) has a ban on the transportation of raw dairy products, including our favorite toast accompaniment: raw butter. We believe the ban should be lifted because 1) there is no evidence raw butter is dangerous. The Foodborne Outbreak Online Database, established by the Centers for Disease Control (CDC) in 1998, notes that there has not been one foodborne illness outbreak attributed to the consumption of commercially produced raw butter and 2) raw butter is a nutrient dense, value added product that can be beneficial to a dairy farmer’s bottom line.
The FTCLDF has filed a petition and intends to hire attorneys to fight for a repeal of the ban. We are seeking help from our food freedom community to help raise the funds ~ won’t you please join us?[16]

I've been importing about a dozen pounds a month of some of the finest grass-fed raw butter from "the Dairy state"! I am what you call a real "Butter Buddy"! I believe I was designed to thrive on butter and primarily for that reason I could never have become "a vegan"!
Update: 8-12-'12 I am now using butter oil that is made from the very same high-quality butter that I was getting whole. My butter oil has a consistency that is more like Ghee than oil. I love it!
Others agree that butter indeed is a health food:
"Vitamin A is what gives butter its yellow color. The amount of vitamin A is also indicative of the amount of vitamin D and K2 which are essential to ideal bone and dental health. The Dentist Weston A. Price used this high vitamin butter oil on animals, children and adults. Today you can buy it under the label X-Factor Butter. With it he was able to reverse cavities in children and osteoporosis in animals. He also saw increases in the I.Q. of children and they would begin to grow better as well."
This means that not only is real butter a health food, the "high vitamin butter oil" can be considered food as medicine! Wouldn't you rather have medicine like this be your food rather than rely on drugs? Especially if you are treating symptoms that relate to poor nutrition!"
The writer continues:
"When made correctly butter is a health food that is an essential source of fat soluble vitamins. You and your children need these and cannot get these from olive and other vegetable oils that you are told are superior. Without the green grass in the diet of the cow the butter is so low in vitamin A that it is a whitish yellow... just like the butter most people eat today. It is devoid of any significant nutritive value. Cows that are raised in feed lots see little to no green grass and so have very low quality milk or meat. Again this is another example of food for profit first and quality second."[2]
Dr. Weston A. Price in his book said:
"I have referred to the importance of a high vitamin butter for providing the fat-soluble activators to make possible the utilization of the minerals in the foods. In this connection, it is of interest that butter constitutes the principal source of these essential factors for many primitive groups throughout the world. In the high mountain and plateau district in northern India, and in Tibet, the inhabitants depend largely upon butter made from the milk of the musk ox and the sheep for these activators.
The butter is eaten mixed with roasted cereals, is used in tea, and in a porridge made of tea, butter and roasted grains. In Sudan Egypt, I found considerable traffic in high vitamin butter which came from the higher lands a few miles from the Nile Basin. This was being exchanged for and used with varieties of millet grown in other districts. This butter, at the temperature of that area, which ranged from 90° to 110° Fahrenheit, was, of course, always in liquid form. Its brilliant orange color testified to the splendid pasture of the dairy animals. The people in Sudan, including the Arabs, had exceptionally fine teeth with exceedingly little tooth decay."
Chef Rob has looked into an exceptional source of real butter from Iceland where their "climate and relative lack of pollution lead to healthier grass, on which the cows graze in the summer".[3]

October, 28, 2011 Aajonus Vonderplanitz writes about a man who medical doctors had sent home to die:
"... I mixed the raw butter and a little unheated honey, about 6:1 ratio respectively. We opened his mouth and I placed a teaspoon of the mixture in his mouth. His faced winced at first as if he had tasted something too rich. He was barely conscious but I could see there was some. However, within seconds, his face relaxed and his mouth enjoyed the lubrication in his intensely dry mouth caused by medical drugs, water IVs and nutritionless hospital food."

and "in rural turkey butter is made only from yogurt"[5]
A friend gifted me with "The Taste Divine - Indian ... Cooking ..." and I just discovered that: "In India, butter is traditionally made from yogurt, not from cream." That inspired me to begin researching this and the link (Footnote 5) is the first positive result from my search.

Grass-fed butter -
When cows eat grass, they concentrate antioxidants into their dairy. The major antioxidant that is concentrated is a fat-soluble form of vitamin A called retinol. Retinol is especially important for healthy neurological function, immune coordination and vision.[9]
Grass-fed butter is also a rich source of various beneficial vitamin E tocopherols and other carotenoid antioxidants. These all have a positive effect at reducing oxidative stress in the arterioles and reducing risk of heart disease.
Grass-fed butter also contains powerful anti-inflammatory fatty acids. This includes the short- and long-chain omega-3 fatty acids ALA, EPA and DHA. It is is also the richest source of conjugated linoleic acid (CLA). CLA is extraordinary powerful anti-inflammatory fatty acid that has been shown to be anticarcinogenic and immune-enhancing.(6)
Finally, grass-fed butter is one of the best sources of butyrate. This is a small-chain fatty acid (SCFA), and it has a profound benefit on energy production and digestive health. Butyrate is the preferred fuel source for our large intestinal cells. This is especially important because it helps prevent and heal leaky gut syndrome.(7)
Intestinal permeability is considered by many to be the leading source of inflammation in the body. This is most likely the rationale by how butyrate helps reduce auto-immunity and prevent cancer cell development.(8)

Add to "Butter's Profile" -
"Weston A. Price was perhaps the first scientist to identify the importance of what he called Activator X, a fat-soluble substance that he claimed was crucial for healthy tooth and bone development.
Thanks to the work of the Weston A. Price Foundation, we now know that this elusive vitamin must be vitamin K2. Vitamin K2 is generally made in nature by the fermentation of bacteria; as such, it shows upin such foods as sauerkraut, natto and miso (fermented soy beans) and cheeses like aged gouda and brie. Vitamin K2 is also abundant in the concentrated butter oil from cows eating young, actively growing green grass, presumably made by fermentation in the guts of the cows. This butter oil was considered Dr. Price’s magic medicine, especially when he used it in conjunction with cod liver oil.
Modern research is only now discovering the importance of this fat-soluble vitamin. Thus far, we know that vitamin K is a crucial player in directing the calcium away from the soft tissues (i.e., blood vessels) and toward the bones. Adequate vitamin K in the diet is important not only for preventing and treating osteoporosis, but also for preventing the build-up of calcium in our blood vessels.
Vitamin K also promotes the normal metabolism of the heart cells, another key component of cardiovascular health."[10]

"Butter is an important source of vitamins A and D and contains saturated butyric acid, which fights cancer. As for the vaunted polyunsaturated vegetable oils, we eat far too many. Refined corn, safflower, and sunflower oil lower HDL and contribute to cancer."[13]

Up til yesterday I was favoring German Butter as a good pasture-fed butter that can be purchased in some local markets however my local VONS kicked up the price a buck on German Butter and consequently I needed to do some price comparison and fortunately found unsalted Kerry Butter at a much better price and on top of that that butter has a deeper yellow color! A better butter at a better price makes this guy all the more happy!

March 12, 2018 - Vessels for High-Vitamin Butter -
The current stock of Kerrygold Pure Irish Butter has a nice deep color that I find exceeding that of "German Butter". Inside the Kerrygold packaging is a recipe for "DUBLINER CHEESE BISCUITS WITH SAGE AND WALNUTS"[14] that's presented as: "a wonderful baked dish and the perfect vessel for Kerrygold Butter". It may very well be however I'd recommend tweaking the recipe in accordance with Nourishing Traditions which would be a matter of allowing the dough to lightly ferment before baking.[15]
