NOTE: Much of our current corn supply in the US
is not GMO. Please see KING CORN for background
on commercial corn.

JM,
It is 10:32 AM.
I am working on major projects.
I walked around the land as well.
I am asking you to work with the food, and take care of the food as part of our trade
as much as possible, and arrange the cooking as best you can to met your needs
and my own.
Do your best to arrange the timing so it works. I want to hand this off to you.
This is what I am paying for and trading for.
I am taking time from my other projects to address your concerns now.
I called Hani.
The woman who grows the corn does not have phone service out there.
The chicken is sold as organic.
The grower is Hani Illian's partner.
The chicken runs around outside and is put inside at night to protect it from the coyotes.
Hani says the grower feeds the chickens corn and barley at times.
He is going out there tomorrow or Saturday.
He will bring in the bag.
He will confirm it is organic feed.
It understands our expressed need that it be organic feed.
I told him I will recommend sources of organic feed to him.
I just wrote to my allies at the Organic Trade Association
requesting sources of organic corn and barley. I want to
substitute and recommend sources from companies I
work with or admire.
I gave him your phone number.
Here is his contact information.
I am requesting that you be in the loop with the followup
regarding his current quality of feed and where it is grown.
That means calling him to make sure he remembers to bring in the bag,
and then letting me know via email.

We are in process of establishing an organic section of food in the store
under the name Nezar Organics, and I appreciate your concern here
for the quality of the feed.

When I start the calves feet (or whatever the last item is that will produce high gelatin & more beneficial substance-rich bone broth) I would prefer to cook that at a low simmer for at least two two days and preferably. three days. That would mean it would be best not to get more meat for the crock until after that is finished. I can only guess that if I could go three days it would take at least till Sunday night. Your input is welcomed on this as well.
I have taken my portion of the liver out and the rest of the liver (and whatever else may have been in that same bag of liver) is all yours!

I am involved in some exciting projects this year,
One project aims to establish Nezar's Organics--an organic section of foods within Mideast Market,
a very popular marketplace for foods from many countries
that serves many Mideast and African customers.
It is located in my neighborhood. The owner of the market, Hani Ilaian,
is a friend of many years.
He butchers his own lamb and has a partner that raises chickens.
The lamb and chickens are pasture raised
primarily.
I am looking for sources of organic feed both corn and barley.
Please recommend a source from the OTA membership.
I will be renewing my membership close to the NPEW
or soon thereafter.
I look forward to assisting you again this year at the show.
Let's plan ahead this year, and make sure I have a shot list
and an assistant to make sure I get the photos that are wanted.
