If you're in the first phase of the candida diet you shouldn't eat any
Sugar or carbs, but after that it's OK because it's different from what we normally eat. And Spelt bread has gluten, which is part of wheat, so it usually causes an allergic reaction.
When you have systemic candidiasis it becomes a fungus that attaches to your intestines. Then when you kill it, it leaves holes where undigested foods and all kinds of things get into your blood, and that's when your immune system goes on the attack and therefore you become allergic to whatever foods you eat all the time. So, the idea is to stay one step ahead of your immune system until your gut heals by using the rotation diet.
If you could just eat broth and mushy meats and veggies for months and let your insides heal, you may not have allergies anymore! That's the plan, but that's very difficult, and it usually takes much longer in a much longer more convoluted route because we become ADDICTED to the foods we eat all the time.
Like I said before, I don't know how it works, but allergy shots really help calm your immune system.
