I think they suggest water-soluble lubricants because the alternative is presumed to be petroleum jelly which, as I mentioned, would eat through the latex. I don't think vegetable oils are on their radar screen!
In our experience of well over a year using coconut oil with condoms, it has worked fine. No failures. I don't think there's any reason for concern whatsoever.
