If you have been eating grains, and things with yeast in them until you found out about the celiac, and then cut them out of your diet- yes, you can be having die off symptoms from no longer feeding the candida.
It's not just the
Sugar in the carbohydrates in the breads etc, it's the fungal spores (mycotoxins) that keep contribuiting also to the candida. Anything also with yeast in it, including alcohols like beer.

I was diagnosed with celiac with an endoscopy, and confirmed with a blood test, just prior to gallbladder surgery. My liver problems continued after gallbladder surgery, and with being very strict about not eating gluten. What I found a year after gallbladder surgery, that the reason for my liver continuing to show I was having damage going on--was that I was loaded with parasites. With the
parasites comes the candida.
If the parasites/candida are doing damage in the gut/small intestines, cutting out the gluten alone is not enough. It's important because you don't want to cause further damage, but along with being careful with your diet, it would also be best to add some anti-fungals, and also kill parasites. They take advantage when we have weakened conditions.
Doug Kaufman's "Phase 1 diet" excludes the foods like the grains that are "universally contaminated" because of the way they are stored. You can find it in the FAQ's on his website.
Also, the USDA has reports about mold/fungi in the grains and other food products. Ironic that they are also the same ones that tell us to eat the biggest percentage of our food in the food pyramid in grains.
