I made a pumpkin custard a few days ago that was quite good. It is not on the Candida diet (Pumpkin has a lot of carbs and a little sugar) but I have been following the diet all year so I decided to have a little cheat...I did not use a crust but I suppose you could make one with quonia or brown rice flour. I just used 2 cans of organic pumpkin from Trader Joes, 3 or 4 eggs, xylitol (I sweaten everything w/xylitol and some even say it kills bad bacteria), vanilla (sugar free, but it does contain some alcohol), spices, unsweatned soy or brown rice milk if you would like but coconut milk would be the best choice for health purposes...anyways it's a custard not a pie but it did the trick for me and I felt ok after it. It served 5 people. If you have IBS the xylitol may cause you some trouble though, it makes you very gassy.
