Vegan Reuben Sandwich

This is delicious, plus it's a great way to eat a lot of sauerkraut!

Ingredients:
Rye bread, the small kind for appetizers (or you could use ezekiel bread)
Avocado
Sauerkraut
Thousand Island dressing (note: Make a thousand island dressing according to your criteria. Mixing some organic ketchup into grapeseed vegenaise and adding a little pickle relish is one way.)

To Assemble:
Lightly toast the rye bread. Cut the avocado. Put a slice of avocado on each piece of bread. Top with a spoonful of sauerkraut. Pour a little dressing on the top.

Eat and enjoy!
This is easy, is yummy, plus it's a great way to eat a lot of sauerkraut.
